This is what happens when you screw up a recipe with egg whites and are left with only one whole egg and a whole bunch of egg yolks.
I wanted to make macarons so separated out some eggs plus some for Italian buttercream but I messed up the buttercream and then didn’t have enough energy to go to the shops and also, you know, actually go through with the macarons, so I googled for a recipe for using up leftover egg yolks and came up with this.
I had to halve the recipe because that was all the egg yolks I had, and replaced the orange zest and juice and lemon extract with some orange blossom water. These were baked in a 6 cup muffin tin and topped with a simple glaze, also perfumed with orange blossom water.
They are pretty good for a mistake cake.
